THE BEGINNING
THE IDEA
RAIZ. began with Gil and an idea he had been carrying for some time: private dining.
as a chef, he wanted to bring his craft beyond the restaurant setting and create intimate dining experiences shaped around the people, the place and the occasion.
THEN CAME ANOTHER ROOT
when Marta became part of the idea, she brought with her a different relationship with food — memory and the Alentejo.
much of it came from her grandfather, who loved to cook slowly and lovingly, gathering his family around the table. through him, she learned that food could be more than nourishment: it could be a way of caring, connecting and bringing people together.
TWO TERRITORIES
RAIZ. was shaped between Madeira and Alentejo — two territories that entered the project through two people, two ways of seeing, and two different relationships with food and place.
through Gil, Madeira brings the sea, the landscape, the products and the environment that surround his kitchen. through his connection to the island, it became part of the language of RAIZ.
MADEIRA
through Marta, the Alentejo brings memory, family, tradition and the meaning of gathering around a table. it is a relationship with food shaped long before RAIZ. existed.

Gil brought the kitchen, the craft, the desire to create, and an idea he had already carried with him
Marta brought organisation, sensitivity to detail and the determination to help bring that idea to life.
